What's the difference between college and pros for coordinators?

I've never played football at any level, so excuse the stupid question.

There's been so much talk about EW needing to be upstairs but Kirk B. mentioned that most coordinators in the NFL are on the sidelines. Taking everyone at their word, why the difference in philosophy?

BTW...sorry if I missed this in another thread. I'll play the newbie card.
