OT: Thanksgiving Turkey cook

I realize we are a few day away from the HUGE game vs. PSU but Thanksgiving is next week. I bought my 17.67 lb. bird today and it is thawing. I am cooking for 12 people; not just the bird but all of the sides / apps too. I have fried birds, cooked in the oven several different ways, but this technique has produced the best result I've had.

The whole key to cooking turkey is to NOT over cook it. The internal temp should not exceed 160F IMO. With the carry over cooking, the IT will hit 165F I even pulled the bird last year at 155 and it was super moist. The FDA says 155 for a short period of time is a safe temp.

I scale up the recipes as needed. I cook a five lb. bag of potatoes for Thanksgiving. Leftovers are tasty!
